Aroma potential of Albillo wines and effect of skin-contact treatment

Free and glycosidically-bound aroma compounds were analysed in Albillo grape must, skin and wines, and the effects of different skin-contact treatments on aroma composition and wine sensory characteristics were evaluated. Energy demand for modern society is ubiquitous and the liquid fuels play important role in this context. The market acceptance of liquid fuels depends on a highly rigorous quality control, which requires accurate and precise analytical methods to monitor the chemical parameters established by regulatory agencies. Fast and on-site monitoring of the quality parameters of fuels can be achieved by electrochemical techniques using disposable sensors, such as screen-printed electrodes (SPEs). This revision is devoted to recent development and application of SPEs to monitor quality parameters of liquid fuels (fossil fuels and biofuels), including the determination of organic and inorganic analytes using voltammetric or amperometric detection. Trends of SPE technology for quality control of fuels, based on the reported electrochemical methods that may be considered by regulatory agencies, are highlighted.

Volatile compounds of six species of edible seaweed: A review

Seaweeds are widely distributed throughout the world. Many seaweeds are of commercial importance with some consumed directly or used as an ingredient as they have functional, nutritional and/or organoleptic properties. Consumer acceptance of food is closely related to its sensory properties, of which flavor is of prime importance. A significant contributor to flavor is the aromatic volatile components present. This review focusses on the volatile components identified in commercially important edible macroalgae species consisting of four brown (Himanthalia elongata, Laminaria spp. including L. ochroleuca, and Undaria pinnatifida) and two red species (Porphyra umbilicalis and Palmaria palmata). In excess of 200 volatile compounds have been identified consisting of hydrocarbons, alcohols, aldehydes, ketones, acids, esters, furans, phenols and sulfur- containing compounds, among others present in minor quantities. The extraction/concentration conditions, chromatography and detection methodologies applied varied and impacted on the volatiles identified due to differences in their hydrophobicity, molecular weight and vapor pressure. This review highlights that considerable more information is required to identify volatile aromatic compounds in edible macroalgae and to identify those most likely to impact sensory perception. Such information could be used to aid new product development or widen applications of these seaweeds in the food or beverage sectors.

Free and bound volatile compounds as markers of aromatic typicalness of Moravia Dulce, Rojal and Tortosi red wines

Rojal, Moravia Dulce and Tortosi are three red minority grape varieties grown in La Mancha region (Spain). In this work, wines from these grape varieties were elaborated across four harvests (2006-2009). The aroma of wines was studied by instrumental and sensory analysis to determine their typicality and quality. Free and glycosidically-bound aroma compounds were isolated by solid phase extraction (SPE) and analysed using gas chromatography-mass spectrometry (GC-MS). GC-MS analysis of wines identified 75, 78 and 80 free aroma compounds and 59, 62 and 62 bound aroma compounds in Moravia Dulce, Rojal and Tortosi wines, respectively. C6 and benzenic compounds were the major components of free varietal aroma. Bound aroma fraction was characterised by a larger concentration of benzenic and C 13-norisoprenoid compounds, which suggest that these wines possess a great aroma potential.

The reaction of thiosaccharin (tsacH) with the triosmium cluster [Os3(CO)10(NCMe)2] furnishes the decacarbonyl isomers [HOs3(CO)10(mu-S-tsac)] (1) and [HOs3(CO)10(mu-N,S-1,3-tsac)] (2) in a 3:1 ratio at room temperature. These isomers differ by the coordination mode displayed by tsac ligand. Thermolysis of 2 in refluxing toluene affords the hexanuclear cluster [H2Os6(CO)17(mu-C,N-1,2-C6H4CNSO2)2(mu3-S)(mu4-S)] (3) via carbon-sulfur bond scission and subsequent capture of the extruded sulfur by the cluster core. The molecular structures for the three new clusters have been determined by single-crystal X-ray diffraction analyses.
